Maple-Roasted Carrot Salad Recipe




   • 2 pounds carrots, preferably with leafy tops
   • Good olive oil
   • Kosher salt and freshly ground black pepper
   • ¼ cup pure Grade A maple syrup
   • 2/3 cup dried cranberries
   • 2/3 cup freshly squeezed orange juice (2 oranges)
   • 3 tablespoons sherry wine vinegar
   • 2 garlic cloves, grated on a Microplane
   • 6 ounces baby arugula
   • 6 ounces goat cheese, such as Montrachet, medium-diced
   • 2/3 cup roasted, salted Marcona almonds

Preheat the oven to 425 degrees.

Trim and scrub the carrots. If the carrots are more than 1 inch in diameter, cut them in half lengthwise. Cut the carrots in large diagonal slices 1 inch wide × 2 inches long (they will shrink when they roast) and place in a medium bowl with ¼ cup of olive oil, 1 teaspoon salt, and ½ teaspoon pepper. Toss well and transfer to two sheet pans. (If you use just one, they’ll steam instead of roasting.) Roast for 20 minutes, tossing once, until the carrots are tender. Transfer all the carrots to one of the sheet pans, add the maple syrup, toss, and roast for 10 to 15 minutes, until the edges are caramelized. Watch them carefully! Toss with a metal spatula and set aside for 10 minutes.

Meanwhile, combine the cranberries and orange juice in a small saucepan, bring to a simmer, then set aside for 10 minutes.

In a small bowl, combine the vinegar, garlic, and ½ teaspoon salt. Whisk in 3 tablespoons of olive oil. Place the arugula in a large bowl and add the carrots, cranberries (with their liquid), goat cheese, almonds, and the vinaigrette. Toss with large spoons, sprinkle with salt, and serve at room temperature.

Not exactly what I was expecting regarding Jeffrey, but so far the recipes have been worth it.

I've had such consistently good results making Ina Garten's recipes that I would have felt remiss had I not added this newest cookbook to my collection. While I mostly like it, I have to say that I am a little disappointed in a couple of ways.

But first, the good part - the verdict on the recipes I've tried so far:
--- Lentils & Kielbasa Salad - I loved this, but, although he liked it, my husband didn't think it was particularly noteworthy. I liked the idea of cooking the lentils with a whole turnip and clove-studded onion thrown in and thought that it would deliver a flavor punch that I hadn't tried before, but for my money (and time), I think Alice Waters's Lentil Salad from The Art of Simple Food: Notes, Lessons, and Recipes from a Delicious Revolution packs just as much flavor with less than half the work. These lentils, with those flavors, along with the heavily mustarded vinaigrette, worked really nicely with the kielbasa and were delicious. I will likely make this again, but Alice's remain at the top of my lentil recipe list.
--- Maple-Roasted Carrot Salad - We LOVED this salad. So perfect for fall. Although Ina suggests it for lunch or a side, we found that it made a satisfying light supper with a glass of crisp, white wine. My son, who also had it, loved how flavorful it was and even asked me if he could have the recipe! Although the recipe instructs that everything be tossed together, I would have preferred leaving the goat cheese and almonds to be scattered over the top of the tossed vegetables.
--- Spaghetti Squash with Garlic and Parmesan - This is the recipe to try if you're not sure how to make spaghetti squash. It is similar to Sara Foster's delicious recipe from Fresh Every Day: More Great Recipes from Foster's Market, which is made with balsamic vinegar and without garlic. The addition of garlic is a good one. Freshly-grating the Parm is a must. This is yummy.
--- French 75 - a standard recipe for this cocktail, but messing with it would make it something other than a French 75, wouldn't it? I'm so glad she included this, though. It's a lovely cocktail that's not seen often enough.

What disappointed me about the book was that I didn't feel as though the theme - cooking for Jeffrey - was realized in the way I was expecting. Although some of the recipe descriptions say "Jeffrey likes this" or "Jeffrey and I had this when...", Jeffrey's favorite recipes appear at the back of the book as a list of dishes, the recipes for which are in Ina's other cookbooks!
What?
I thought that's what this cookbook was supposed to be!

In addition, there are a lot of recipes that seem to be little more than variations on recipes from earlier books.
As usual, desserts take up the lion's share of pages, but as much as I like to complain about that, desserts from Ina's earlier books (coconut cupcakes, those brownies!) have easily been among the best I've ever made.

Bottom line:
There are good recipes here. The first few I tried assured that I will be delving further into these recipes.
I'm not sorry I bought this book, but I do have to say that it was not exactly what I was expecting.

Does Not Disappoint

I purchased three cookbooks over the last several weeks and the only one I felt worth the money is this one. There are many recipes that I will be using. I am actually cooking the brisket tonight for company. I have several other of Ina Garten's cookbooks and this is an excellent addition to my collection.

A little too edited - there aren't very many recipes in this book. It is beautifully photographed and I appreciate the photos. I suppose if you want a selection of go to recipes this could do if you like the selections. There just aren't many alternatives to what is presented here so you kind of get what she gives you and no more. I'll use it but it's one of those that will be given as a donation to the library sale next year I think.

About the Author

Alexander L. Chapman, PhD, RPsych, is a psychologist and professor in the department of psychology at Simon Fraser University (SFU), as well as president of the DBT Centre of Vancouver. Chapman directs the Personality and Emotion Research Lab where he studies the role of emotion regulation in borderline personality disorder (BPD), self-harm, impulsivity, and other behavioral problems. His research is funded by the Canadian Institutes of Health Research. Chapman received the Young Investigator’s Award of the National Education Alliance for Borderline Personality Disorder in 2007, the Canadian Psychological Association’s (CPA) Scientist Practitioner Early Career Award, and a Career Investigator Award from the Michael Smith Foundation for Health Research. He has coauthored eight books—three of which received the 2012 Association for Behavioral and Cognitive Therapies (ABCT) Self-Help Book Seal of Merit Award. Chapman is committed to bringing knowledge and skills from psychological science to people who need help managing their emotions. He has been practicing mindfulness for over fifteen years, practices martial arts, and enjoys hiking, skiing, reading, and spending time with his wonderful wife and two sons.

Kim L. Gratz, PhD, is professor of psychiatry and human behavior at the University of Mississippi Medical Center where she serves as director of the division of gender, sexuality, and health, as well as director of both personality disorders research and the Dialectical Behavior Therapy (DBT) Clinic. Gratz received the Young Investigator’s Award of the National Education Alliance for Borderline Personality Disorder in 2005, and the Mid-Career Investigator Award of the North American Society for the Study of Personality Disorders in 2015. She has written numerous journal articles and book chapters on borderline personality disorder (BPD), deliberate self-harm, and emotion regulation (among other topics), and is coauthor of four books on BPD, self-harm, and DBT, including The Borderline Personality Disorder Survival Guide, Borderline Personality Disorder, Freedom from Self-Harm, and The Dialectical Behavior Therapy Skills Workbook for Anxiety. Three of these books have received the Association for Behavioral and Cognitive Therapies (ABCT) Self-Help Book Seal of Merit Award. Gratz currently serves as principal investigator or coinvestigator on several large federal grants, including multiple grants from the National Institutes of Health.

Foreword writer Marsha M. Linehan, PhD, ABPP, is professor of psychology and director of the Behavioral Research and Therapy Clinics (BRTC) at the University of Washington in Seattle, WA. Great Book

We have used this book in our Freshmen English class, but have limited copies. As a result, we have to draw from a lottery just to see which teacher gets to use it. I tried calling the publisher for extra copies but was told that this book is no longer in print. What a shame. It really has good info on author and helpful info for students to examine while studying the story.

A love story for the ages . . .

Jamie Magee has done it again!!! Not only did she give us another amazing love story, she also kept us on the edge of our seats with new details and clues about the massive war that is coming for everyone caught up in the web of hearts and souls! A few plot lines from previous books in the series were brought up again, but Ms. Magee kept it fresh and fascinating by showing the same timeline through these characters' eyes (one of her trademark killer moves, in my opinion), as well as dropping some foreshadowing hints to drive us crazy until the next book comes out.

Jamie Magee is one of my favorite authors, and the only reason I haven't reviewed her previous novels (other than a 5 star rating, of course) is because I was too busy buying up the next book in the series and immediately diving in!!!

Author Jamie Magee has done it again

Amazing addition to the series/collection. The books do need to be read in order of the series but is better with the whole collection. The book is well written, smooth flowing and easy to read.

Indie has always been different. In the first book in this series Rivulet her world was turned upside down. She learned thing about herself and her friends that she never would have guessed possible. She is one of the seven sisters and the Queen of the Veil. It is time she finds out what her powers are and takes her place. But how? This book is full of twists and turns and will keep you on the edge of your seat begging for more. Once I started it, I couldn't put it down.

I absolutely love Jamie Magee.. These books all go together as two separate series but both go together . There is a new book coming out this month so I've started the series agian from book one till three than the see book comes in and I can read them altogether .. Just amazing how they flow all together and the story is amazing. I've read many series that when they get to book five they lose me because they are grasping for the story that is no longer there. Jamie is brilliant and has not lost me yet just amazing reading..
